Health concerns present
a compelling reason for the rise on demand for organic/natural
food products. Today we are seeing a dramatic
increase in new diseases, as well as the recurrence and
spread of familiar diseases once thought to be under
control. There has been a rise in the spread of
strains of bacteria resistant to antibiotics, and fresh
concerns have arisen about new infectious agents of
animal origin that are infecting humans, as in the case
of Bovine Spongifarm Encephalopathy (Mad Cow Disease).
Antibiotics are used
extensively by conventional farms to fight the diseases
caused by overcrowding, lack of sunlight, and fresh air.
This has lead to the development of antibiotic resistant
bacteria. To date, four resistant strains of
disease causing bacteria have transmitted from animals to
humans: Salmonella, Campylobacter, Enterocci, and E.coli.
The antibiotic use in conventional farming is enormous.
According to a recent report from the institute of
Medicine, about half, or 12,000 tons, of all
antibiotics produced in the U.S. each year, are used for
animal husbandry. As little as 10% of these drugs
are given to treat illness, the rest are used as growth
promotants or to prevent disease. Direct evidence
that 'antibiotic use in food producing animals results in
resistant diseases in humans' was presented at a meeting
of 70 health experts convened by the World Health
Organization.
